Brad Jolly tasted success at a young age, when just ten years old he started cooking for his family, saving them a mother who was a self-confessed disaster in the kitchen.
Since those early days, Brad has pursued his passion professionally since he was a teenager, working in some of the world’s most renowned kitchens, and winning a swag of prestigious international cooking awards, before returning to Australia in 2001 to open the nationally acclaimed restaurants Lat 27 and Alchemy in Brisbane, the thriving state capital of Queensland and the fastest growing city in Australia.
Brad’s international reputation was established early in his career, in 1993 at just 22 Brad competed against the best young chefs of 25 nations to take out the World Title in the Jeunes Commis Rôtisseurs Competition, held annually by the prestigious international gastronomic society La Chaine des Rotisseurs, at regional, national and international levels.
At The Palms, Brad hones all his know-how and culinary skills into providing guests with delicious food inspired by the Mediterranean. The casual nature of the restaurant has allowed Brad to experiment with flavours and indulge in heartier meals.
