There’s nothing like our Josper Oven Grilled Pineapple Mojito – after all, the best cocktail is a cocktail made by someone else. But, you can take the experience home with this DIY recipe, made to impress the next time you have company.

The Palms Grilled Pineapple Mojito

A delicious twist on a classic cocktail.

• 5 Minutes
• 2 pieces of fresh pineapple
• 20m pineapple juice
• 50ml Bacardi Rum
• 5 mint leaves
• 15ml of cinnamon sugar syrup
• Ice
• Soda Water
• Muddler or Rolling Pin



Grab your boston shaker (you know, the one your friend bought you that you haven’t used in a long time). If you don’t have one of those bad boys, find your biggest glass and replace ‘shake’ with ‘stir’.

Add lime, pineapple and cinnamon sugar syrup.

Muddle (or in other words: smoosh) the heck out of the ingredients so that you’re left with a bunch of juice.


Take the mint leaves in your hand and clap. Never forget to clap!

This bruises the mint for the better – you’ll release the beautiful minty aroma. Drop into the mixture.


Add a bunch of ice. Pour in the good stuff – the rum!


Shake shake shake. Pour everything into a glass and top with soda water.


If you want to impress, dip a piece of pineapple into ground cinnamon and sugar and place on top of the mixture. Don’t forget a pinch of cinnamon in the glass for good luck!
